Craving something deliciously healthy that doesn’t compromise on flavor or time? This Easy Garlicky Mushroom & Green Bean Stir Fry offers a mouthwatering meal packed with nutrients! In just 20 minutes, you’ll create a vibrant dish that’s a feast for the eyes and taste buds. This pairs perfectly with steaming hot brown rice. This is the ultimate fuss-free meal that will have everyone coming back for seconds!
Ingredients4 servings
- 3 cloves garlic, minced
- 1 TBSP fresh ginger, minced or grated
- 1 ½ cups green beans, trimmed and halved
- 2 cups mushrooms, sliced
- 1 medium bell pepper, thinly sliced (any color)
- 2 TBSP soy sauce (low-sodium)
- 1 TBSP olive oil
- Garnish: sesame seeds and sliced green onions

In a large skillet, heat the olive oil over medium heat. Add the garlic and ginger, and sauté for 1 minute.

Add the green beans, mushrooms and bell peppers. Stir-fry for 7-10 minutes until vegetables are tender-crisp.

Pour the soy sauce over the vegetables. Stir well to combine and cook for an additional 2 minutes. Turn off the heat and sprinkle with sesame seeds and sliced green onions. Serve hot over brown rice.
Note: You can also use snow peas, snap peas or edamame in place of the green beans.

I love to try new recipes
I prepared this recipe for dinner tonight and let me say, there were NO leftovers. I cut back on the garlic because recently my stomach has had a difficult time digesting it. I love ginger so it was still flavorful. This recipe is super fast and easy and I would definitely prepare it again. It’s a keeper for me!

YUMMY!! I’ve made a low carb version of this recipe in the past, but included either shredded cabbage or hearts of palm, to replace the rice. I’m sure lots of nutritional combinations of this wonderful recipe can be made to suit everyones “style”. Having this for dinner tonight along side a beautiful piece of salmon! YUM!!
